This is the “home” of #RAW. In this space you will find everything that revolves around #RAW, a raw food vegan restaurant in the heart of Florence.

#RAW is much more than a physical place where you can find excellent totally plant-based dishes and drinks, it is a small world that we have created starting from our experience. We like to think that, if it is true that “we are what we eat”, we should know and discover day after day the many wonders that nature offers us and invites us to share.

Here you will find news, recipes, advice, images and videos from the world… we want to share with everyone our experiences, the result of years of study and application. Because a healthy life, close to nature and in total respect for the environment and the animal world, is the true mission of #RAW.

And we would like it to become yours too.

In addition to the articles you find on this site, you can follow us more closely by joining the #RAW community. You will receive our “Giornalino”, in which we periodically collect posts, news, images, curiosities, together with special offers from the #RAW restaurant or initiatives such as online courses, live streamings on social networks and a thousand other ideas that pop in our minds every day.

Above all: all members are invited to collaborate! Maybe for a review of a product on the market, or for organizing an event, or to suggest new dishes that could appear in the next # RAW menu…

In every #RAW’s “Giornalino” you will find a space where you can write your ideas, advice, or even for a simple greeting!

On #RAW’s menu there is a great variety of vegan and raw food dishes, and many drinks and desserts to satisfy every palate.

Everything we do is gluten-free, with no refined sugar, lactose and preservatives or additives.

At #RAW you will find a light cuisine, not too much elaborate, made to enhance tastes and flavors and based on totally vegetable products. 

We study new recipes from around the world every day, and we produce them by enhancing the nutritional properties of each ingredient, with no cooking at all or using low temperatures. Thanks to the low temperatures it is possible to keep intact all the nutritional elements, vitamins and minerals that would be lost through traditional cooking.

Even our desserts, ice creams, juices and smoothies are totally natural: they contain only fruit, cereals, nuts and seeds. No added sugars or artisanal sweeteners, no gluten and lactose.

At #RAW you can stop for lunch, for brunch on Saturday or Sunday, for a quick snack or dessert.

Da #RAW sono Chef e mi occupo della gestione dell’Azienda.

Sono nata e cresciuta a Firenze. 

Lavoro nelle cucine da oltre 10 anni ed ho sempre cucinato vegano.

Mi sono tuffata nel crudismo appena ho messo piede da Raw, ed ho capito e studiato l’importanza del cibo “sano”, oltre a quello “etico”.

Adoro ovviamente il cibo, e leggere.

Ho da sempre una grande passione per la natura e gli animali in generale, sono quasi laureata in Scienze Naturali. Sono vegana per scelta etica da oltre 10 anni.

At #RAW I am Chef and I take care of the management of the company.

I was born and raised in Florence.

I have been working in restaurant’s kitchens for over 10 years and have always cooked vegan.

I dived into raw food as soon as I walked into Raw, as I understood and studied the importance of “healthy” food, as well as “ethical” food.

I obviously love food, and reading.

I have always had a great passion for nature and animals in general, I almost graduated in Natural Sciences. I have been vegan by ethical choice for over 10 years.

VIVIANA

At #RAW I am assistant chef for Chiara.

I was born and raised in Florence.

From a very young age my greatest passion was cooking and it became my job very quickly.

I took my first steps in the vegan world a few years ago, #RAW was an excellent opportunity to combine my new lifestyle with my work.

I am a very sporty and energetic person. I love being outdoors.

In my free time it really relaxes me to build and fix things.

At #RAW I am assistant chef for Chiara.

I was born in La Spezia and lived there and in Bologna.

I am vegan, and I have not always worked as a cook, but I love to cook vegetables for others and thus spread respect for all forms of life.

In my free time I love cinema and take long walks in the countryside.

At #RAW I take care of the service at the counter and in the rest of the restaurant.

Born and raised in the hills of Fiesole, transplanted to Mugello for several years, I currently live and reside in Florence.

Holistic researcher, yogini, I love to travel free, with body and mind. Vegan aware.

At #RAW I found the family with whom to share the passion for my own ideals and the mission to pass all this on to people.

Born in the hills around Siena, between one trip and another I have been living in Florence for almost ten years.
It is here that I began to discover myself more and more: antispecism, yoga, food like a medicine, the importance of freedom, gratitude and unconditional kindness have made me what I am and will transform me further on.
#RAW has allowed me to align my values with my work and actively contribute to making people healthier and more aware.

Born in Florence, a lover of nature and living in the open air, I have done many jobs. Changes, even radical ones, do not scare me.

I believe that we should always try to respect everyone’s life, without any distinction: ideas and ideals, people and animals.

I am vegan because I believe that you can live well without doing any harm to anyone.

Born in Tuscany from a family of southern Italian origins, I am a professional photographer, journalist and, time permitting… graphic designer.

I have done a thousand jobs, lived in a thousand places, and had a thousand passions.

Sportsman and over-the-top dreamer, I love animals and it is for this reason that I chose the vegan lifestyle.
